Heat a medium frying pan over a medium- high heat and add one tablespoon of olive oil
Cut the chicken breasts into bite-sized pieces (season to taste) and add to the pan
Stir-fry until the chicken is golden brown and cooked through
Remove the pan from the heat if you fancy, add a little BBQ sauce and stir to coat)
Whilst the chicken is cooking grate your cheese (if needed) and wash your spinach leaves
Make sure your tortilla is soft- you can quickly warm in the microwave or a dry pan to make it easy to wrap around your fillings)
Start with the chicken breast pieces, then top with pineapple, grated cheese and leaves of spinach
If you are making wraps as a family, make sure the chicken has cooled ready to roll- otherwise these are delicious served warm
Less is more with wrap fillings, overfilling and they become difficult to eat. Pile fillings in a horizontal line, leaving more than half of the tortilla free on the top and a couple of inches free on either side
Fold up the sides, bring up the bottom flap, then continue to roll. Keep those sides pulled in and use the bottom flap to wrap over the filling rolling one or two more times until the whole thing is secure
